A lot of people have been asking me about sharing gluten free recipes. I was a little hesitant at first simply because I DO NOT bake. Or more accurately CANNOT bake. I don't understand why, and it's not for lack of trying. I couldn't bake before I started my gluten free life and things just went downhill from there. But I do, however, love to cook. In the spirit of my love for cooking I will share with you some of my favorite gluten free recipes that do not involve baking!

Sopapillas (This is my own recipe I adapted from "regular flour" recipe):

2 Cups gluten free flour mix (I used New Day Gluten Free's All Purpose Baking Mix)
2 tsp baking powder
1 tsp salt
2 tbsp shortening
1 1/2 warm water
2 cups oil for frying
powdered sugar
honey

Mix flour, baking powder and salt together. Mix in shortening until dough looks like crumbs. Slowly mix in water until dough is moist but now runny. (You may not use all water, different gluten free flour mixes mix differently.) Roll out dough on a flat surface lightly dusted with the flour mix, roll dough about 1/16-1/8 inch thick and cut into desired size pieces. Fry in oil heated to 375 degrees turning as dough puffs and turns golden brown. Dry and cool on a paper towel. Dust with powdered sugar. Serve warm with honey.

Teriyaki Chicken:

1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup white sugar
1/2 cup soy sauce*
1/4 cup apple cider vinegar
1 clove garlic or 1/2 tsp minced garlic
1/2 tsp ground ginger
1/4 tsp ground black pepper
6 chicken breasts

Add all ingredients minus chicken to small sauce pan and stir on low heat. Remove from heat when sauce begins to lightly boil, poor over chicken and bake at 425 degrees. (For added flavor add fresh sliced pineapple on to the chicken before adding sauce and baking!)

*Double check the soy sauce to ensure it does not contain wheat. You do not need to buy special gluten free soy sauce if you do not want to spend the extra money. Brands like LaChoy have naturally gluten free varieties, just make sure you check the labels!
