For those who don't know much about Celiac Sprue here is a brief description. Celiac Sprue is an autoimmune condition in which the consumption of gluten (a protein found in wheat, barley and rye) causes the body to attack itself by destroying the finger like villi in the small intestine which are responsible for the absorption of nutrients. The villi is also where the body creates the enzymes to digest lactose causing many Celiacs to become lactose intolerant. The disease's symptoms include but are certainly not limited too: stomach pain, vomiting, diarrhea, weight loss, malnutrition, anemia and stomach and intestinal cancer.
